Low-carb brown bag lunch ideas

I am in need of some great low-carb brown bag type lunches. I bring my lunch to work and due to my hectic schedule, I don't have time for a ton of planning and preparation. Any ideas? Some ideas for an afternoon snack are great too.

So far, I have nuts, fruit, cheese, and deviled eggs.

Also, my weakness when I am under stress from school is spicy ramen noodles. I have thought about some bouillon in hot water with some shredded zucchini. I could add flavor by adding bacon pieces.

I'd appreciate any ideas that would help me start and stay on my low-carb diet.

If you eat low carb tortillas without stalling on losing weight, they are great. I eat the small wheat LC tortillas that are 4 net grams. I fill them with chicken salad, tuna salad, scrambled eggs, egg salad and even natural peanut butter.

Of course you can always eat the "salads" above just in a dish.

Spread a thin layer of cream cheese on a piece of deli roast beef, then cut the meat into thin slices. Wrap these slice around mini dill pickles. YUM!! I love these!

Can you warm up your lunch at work? If so, you could make my Buffalo Turkey Meatballs.

A burger (turkey, chicken or beef) inside a lettuce bun with the fixins that you like is a nice change. You can also make BLTs this way using the lettuce for bread. (skip the tomato if it makes you stall and I use turkey bacon)

Chunks of cheese with mustard

hard boiled eggs

a handful of almonds (or in my case I usually eat walnuts or pecans because I'm not an Almond fan).

Chew on a piece of sugar free gum that is sweetened with Splenda--there is one out there, maybe Trident Cinnamon? Remember that even gum has carbs

Drink water!

Dill Pickles

I can't eat much fruit without stalling but if you can berries are the way to go.

Yogurt sweetened with Splenda is another good one--again, if you don't stall eating it.

I'm sure that I can come up with more ideas that I use or have read that people use.

Best of Luck!!

Those are some ideas that I can use. Yes, I have a way of heating up meals at work. I like the berries idea. I love almonds too. I have taken cheese to work to munch on. What is your recipe for turkey meatballs?

One meal idea that I like is taco salad, without the taco part. lol I make taco meat and freeze it. Then, I make a salad with lettuce, tomato, onion, and whatever else I like (jalapenos) and put some heated up taco meat on it with some dressing. I also like shredded cheese on it.

Any other ideas are welcomed.

I'm a big soup eater. Minestrone (I like the "Progresso" brand) is very low carbs. So are most soups as long as they don't have lots of noodles or dumplings.

Gold, that is my weakness too. I can live on comfort food, especially when I am under stress. However, I am not a fan of the canned stuff. But, I love homemade Minestrone.

DeBora, Thanks for starting this thread.

I always have a problem when it comes to lunch. By then I'm usually stressed and I end up grabbing something bad to eat.

Looking forward to lunches now!

Thumbs up low carb snacks

favorite "legal" snack is found in the freezer section of the grocery store...fridays has a spinach artichoke dip and we eat it on triscuits! also try triscuits with cream cheese & pepperoni to top it off! In the evening , baked pepperoni is good, real crunchy!

No problem. If ya'll are like me, I am in a hurry when I pack my lunch and during lunch, it is so easy to grab something high in carbs and fat. I wanted a place to share ideas.

I have leftover chicken from chicken quesadillas. I think I will boil some eggs and add to the chicken and toss with lettuce, tomato, a little onion, and salad dressing for lunch tomorrow.
