Popover Pizza Casserole

Popover Pizza Casserole

1 pound ground turkey breast
1 cup onion, chopped
1 cup green bell pepper,m chopped
3 1/2 oz pkg sliced turkey pepperoni (original recipe called for 1/2 pkg regular pepperoni)
1 - 15 1/2 oz jar pizza sauce
1- 4 oz can mushroom stems and pieces, drained (I use fresh mushrooms)
1/2 tsp fennel seed, crushed
1/2 tsp dried oregano, crushed
1/2 tsp fdried basil, crushed
2 eggs
1 cups skim milk
1 tbsp olive oil
1 cup all purpose flour
6 oz thinly sliced mozzarella cheese
1/4 cup grated parmesan cheese, fresh

Cook the ground turkey, onion, and bell pepper till tender. Drain any fat. Cut pepperoni slices in half. Stir pepperoni, pizza sauce, mushrooms, fennel seeds, oregano and basil into the meat mixture. Bring to a boil and reduce heat, simmer uncovered about 10 minutes, stirring occasionally. Grease the sides of a 13 x '' pan and set aside. For the topping combine eggs, milk and oil. Beat with an electric mixer about 1 minute. Add the flour and beat about another minute till smooth. Spoon the hot meat mixture into the baking pan and arrange the mozzarella on top of the meat mixture. Pour the topping over the cheese and cover completely with topping. Sprinkle the parmesan cheese on top. Bake at 400 degrees about 30 minutes or till topping is puffed and golden brown. Serve immediately.
