Tuna Walnut Salad

1 can tuna fish
1 large stalk celery, chopped
1/4 cup chopped walnuts
pinch of cinnamon
3 tbsp mayonnaise (or to taste)
Salt & pepper

Mix it all up.

Nutritional Analysis:Each of two servings has 1.5 grams carbohydrate plus 1.5 grams fiber, 23 grams protein, and 350 calories.

I love tuna salad and chicken salad with walnuts. I always add a little curry to it but I've never thought of cinnamon.

I have started adding cinnamon and even more if a recipe actually calls for it to my recipes; it helps lower blood sugar (my doctor suggested it awhile back). So in addition to cooking with it DH and I each take 500 mg cinnamon with each meal. Even though neither of us are diabetic she was concerned about my sugar level and it can't hurt DH either! I have kept my A1C to at the highest 5.8 since I started the cinnamon.
