Pig and Poultry

I got this recipe from crazyredhead and its very good!

Reminds you of a stuffed baked potato, creamy on the inside, crisp on the outside.

Ingredients:

chicken breasts
sour cream
cream cheese
cheddar cheese
sliced bacon (uncooked-3 or 4 per breast)
chopped green onions (optional)

Directions:

Mix equal parts of sour cream, cream cheese and chedar cheese in a bowl. Set aside.

Cut a wide pocket in the center of each chioken breast.

Stuff the breasts with the cream cheese mixture, season the breasts with a little bit of pepper and wrap each breast with bacon. (Overlap the bacon as you go and tuck under ends so that the bacon doesnt fall off)

Cook the wrapped chicken in a frying pan on stovetop on high heat til the bacon on the bottom starts to show a nice crisp and starts to brown.

Flip chicken breasts over and cook on the other side till bacon browns and starts to crisp.

Place breasts in a baking pan and bake in preheated 350 degree oven 10-15 minutes until chicken is cooked through.

Serve garnished with chopped green onion (optional)

I am making menu plans for my low-carb diet and this sounds like something that I want to add to it.
