Grilled Caribbean Chicken Breasts

  • 1/4 cup(s) orange juice, fresh squeezed
  • 1 teaspoon orange peel
  • 1 tablespoon oil, olive
  • 1 tablespoon lime juice
  • 1 teaspoon ginger
  • 2 clove(s) garlic, minced
  • 1/4 teaspoon hot sauce
  • 1/2 teaspoon oregano
  • 1 1/2 pounds chicken, breast halves
Preparation

1. In a blender, combine all ingredients except the chicken. Pour the marinade over the chicken breasts and marinate in the refriegerator at least 2 hours or up to 48 hours.
2. Grill or broil the chicken for about 6 minutes per side until no trace of pink remains.

Thanks for sharing. Do you happen to have a carb count on this recipe? I was curious because of the orange juice being used in the marinade

Thanks for the quick reply. This sounds good. I have always stayed away from recipes with orange juice in them, since I wasnt sure on the carb count. I am guessing not alot of the OJ is absorbed, then, if its 1 carb per serving.
