We're motoring from southwest Missouri to Philly to meet our 9th grandchild, a little girl born in late May, whom we have not seen except in pictures. Also to visit with our son and his wife, and their two other children: Ashleigh, age 8, and Michael, age 3. Haven't seen Ashleigh or Michael since last Thanksgiving when he was in the terrible two's so am really looking forward to the visit, the travel through Ohio and Pennsylvania, which we have never seen, time away from the phone, the computer, sleeping while dh drives, eating meals I DIDN'T HAVE TO FIX, no dishes or bed making for a week, etc. In other words, vacation time!!!!

We're leaving right after dh finishes services at church this Sunday and will return late Saturday (7/31) so he can be back in the pulpit the following morning.

Can't wait!!!!

Quick Chicken Skillet Supper

I thought this was quite good although dh wasn't in the mood for supper so he pushed his around.

Quick Chicken Skillet Supper

1 tablespoon olive oil
4 boneless chicken breast halves, skinless
1 can cream of mushroom soup
1/2 cup cream
2 cups broccoli florets
1/2 cup shredded cheddar cheese
1/8 tsp. black pepper

Heat olive oil in skillet. Add chicken and cook for 10 mins., or until browned. Remove from pan and set aside. Add brocolli and stir fry for 2 minutes. Add remaining ingredients in skillet and stir to combine. Return chicken to skillet. Cover; cook over low heat 10 minutes or until chicken is no longer pink and broccoli is just tender crisp, stirring often.

4 servings
Carb count: approx. 6 per serving.

Sandie, I think that Im going to make your recipe for tomorrow night's dinner! It sounds delicious. I can serve it over whole wheat noodles for my DH --who has made it through 2 days of a modified low-carb plan.


I have been soooo busy the last few days. Im doing ok but I think that Im hitting a plateau (sp?) again. Its my fault because Ive been really bad lately at keeping a schedule for eating. Im really not cheating, just eating whenever....and that causes me to eat more. Im really miss that big weight losses that I had in the beginning.


Making some foods ahead of time has really helped me a lot.


leasmom, Youre chicken recipe is right up my alley too. Its been a long time since Ive had gravy. MMM!

Hi All! I am new to FamilyCorner and was searching through the boards. I found this one and would like to join in. I'm planning on re-starting Atkins tomorrow and I think this would be great to keep me motivated and give me some different ideas. I tend to get in a food rut! Looking forward to getting to know everyone here!

Welcome to the plateau. There's plenty of room here for both of us. Maybe we can nudge -or shove -each other off. It's so easy to let extra carbs slip in when you're not paying attention!

Diane - Glad to see some new blood on the thread again. It seems we're all in a rut lately. But we'll crawl out - we always do!!

I have been on a plateau for about 2 months

more or less. My clothes are getting looser, mostly my pants but I heard that's how it goes...first it's your pants, then it's your shirts. So, hopefully by September I will have dropped this size and be in a size 24. I know that's still large to most people in society, but for me that's wonderful. I was in a size 6x, so to be in a size 24 would be wonderful, purely wonderful. I wonder what I will do when I get to the sizes of 14 and 16, which is still 'big' to non-heavyset people. I'm enjoying my ride down!!!

Welcome, Diane!

You will find this an extremely helpful, supportive group ~ I sure have during the past month that I have been on SB. They are very willing to answer questions and even quicker to offer support for what we are doing.

I snuck a sneak mid-week peak at the scales this a.m. because I won't be here to weigh on Wednesday and was delighted to find I have lost another 3 lbs. Especially good since I have been adding back in carbs and at times am unsure if I am adding too many or not enough. I am comfortable with a 1 to 3 lbs. loss per week on SB Phase 2 so was encouraged greatly. I sure hope to be under 200 lbs. when my father and his girlfriend come to visit in mid-September. The scales read 205 this a.m. so there is every likehood that I will be that and perhaps some pounds under that 200 lb. mark.

Out for breakfast this a.m. and with much more confidence than ever before, I was able to order exactly what I wanted and the waitress didn't ask if I was sure I didn't want just a little hash browns or just one piece of toast. Same waitress, just a different attitude for me! Three scrambled eggs, 2 pcs. well-done bacon, coffee and a glass of water. (Not many restaurants out here in the midwest carry Canadian bacon on their menues!)

Well, time to get off here and get the vehicle packed for tomorrow's get-away. If I don't have a chance to get back on here again before we leave, you all have a great week!

Thanks so much for the warm welcome ladies! Well, breakfast today was an egg, bacon, low carb bread and coffee. I know I need to make sure I have a lot of stuff ready made in the fridge for this so I'll be off grocery shopping this afternoon.
