Here is the pizza recipe, now don't let zucchini scare you it is really good!

Makes 4 servings each serving has 14 grqms of carbohydrates and 2 grams of fiber, for a total of 12 grams usable carbohydrates and 22 grams of protein. (does not include toppings- so that is where you have to be careful)

3 1/2 cups shredded zucchini
3 eggs
1/3 cup rice protein powder or Soy powder
1 1/2 cups shredded mozzarella
1/2 cup grated parmesan cheese
1 or 2 pinches of dried basil
1/2 tsp salt
1/4 tsp pepper
Oil
1 cup sugarless pizza sauce
Toppings as you desire

Preheat oven to 350 degrees. Sprinkle the zucchini with a little salt and let sit for 15 to 30 minutes. Put it in a strainer and press out the excess moisture. Beat together the strained zucchini, eggs, protein powder, 1/2 cup mozzarella, parmesan, basil, salt, and pepper. Spray a 9 x 13" baking pan with nonstick cooking spray and spread the zucchini mixture in it. Bake for 25 minutes or till firm. Brush with a little oil and broil it for about 5 minutes or till golden. Next spread on the pizza sauce and add the remaining 1 cup mozzarella and other toppings. Bake another 25 minutes and then cut into squares and serve.

Thanks for the recipe! I love zucchini so I will definitely try it. I will have to wait for a while, though, because it has too many carbs in one piece of pizza since I'm only at 20 carbs a day.

It won't be long before I hit the bed tonight.

Day 3:

I had a pretty big breakfast today at 9:00 am -

I made an omelet with 3 eggs, some leftover pork from last night, a few hot pepper rings and a little shredded cheddar cheese. Everything in it was "legal".

At 1:00 -

I drank one Atkins 2 carbs chocolate latte drink. YUM! I could totally get into drinking those as a dessert by pouring it into a blender with ice and blending it .

I have these on hand for days like this when I've eaten a big breakfast and then I'm not really hungry at lunch or for when I need to grab something quickly. Otherwise, they are to $$$ to me to just drink every day.

I have to drink more water today. Yesterday I did pretty well. I had 24 oz + 16.9 + 16.9 + 8 oz of plain water = 65.8 oz and then 2 c. of hot decaf tea. Yep, I peed all night long. lol!!

So far today I'm feeling ok. A bit tired, a little headache but ok.

I used to be able to get tons of Atkins supplies in Pa. but here, it's very little. I never bought a lot of their stuff anyway. Once in a while I will buy the drinks and after a couple of weeks I might buy a couple of bars to keep on hand.

My problem is knowing that I have the stuff in the house so if I don't have it, I can't be tempted. LOL!!

I made this chicken salad for dinner tonight. It was delicious.

I've had 48 oz of water + 8 oz of hot decaf tea today. Not as good as yesterday but that A LOT of water for me.

Good news is that I don't have a headache tonight! Maybe the sugar cravings will go away sooner than later this time.

Maybe in the next month I can start low carbing. I should be finished or almost finished with the federal background check, moving into our new home, and maybe have some sort of handle on my thesis.

Are you writing down recipes? It would be good to know what you are having for breakfast, lunch, and dinner. My only problem is that I cannot obtain Atkins stuff here.

Doing okay here, drinking lots of hot tea, and sugar free flavored water during the day.
Had a peanut butter sandwich on legal bread for lunch and fixed a low carb turkey puff casserole for supper out of my low carb cookbook and even DH likes some of the recipes in it!
Yeah, the biggest problem with so much water is staying out of the bathroom! LOL

I am writing down my menus. If I make a new recipe, I post it on my blog (the link is in my siggy line). I've been posting my dinner menus there, too.

What Atkins stuff are you looking for? The only things that I can find at Walmart so far is the drinks and the bars.

I don't use too many other Atkins brand things.

Do you buy bottled flavored water or do you make your own?



I decided to weigh myself on Friday instead of waiting until this Monday - which marks one week. I lost 6 lbs!! I know that it water weight but I really do feel better with that puffiness gone. I was having trouble wearing my wedding ring because my skin would get a rash under the ring. Now it's fitting better. My TOM started, though, so who knows what the scale will say on Monday.

I'm snacking on a few pork rinds now. I forgot that I liked them until my dh mentioned them to me.
