Help! Need Low Carb Crockpot recipes

  • I am a single mom that is also a college student and I just added a working mom to that. I will be getting dd up at 7 a.m. every morning and getting her off to school then getting myself ready for work from 9 to 3:30 and then going to class two days a week from 3:45/4:00 to 6:30/6:45 and then getting home about 6:15 two other nights and then on some Fridays I will get home at 3:30, and other Fridays I will be on the road driving to North Carolina to get my nieces and then to take them back on Sunday. NOt only this but I have two OTHER classes online which will take up my weekends-(meaning they are due on Sunday midnight), P.S. I will have to work 2 weekends on Saturday's. On top of that I may have inhome therapy for my ADHD/Bipolar daughter, so in other words...are lives are gonna be REALLY complicated from now on...

    I am gonna buy a crockpot but I will need ideals of foods...I will have to take my lunch everyday as well, so I need ideals so I can have it for dinner and maybe even take it for lunch the next day!!!
  • Low Carb Crock Pot Pork Chops Recipes

    Chicken Pork Chops
    6 Lean pork chops, 1-in thick
    1 tb Salt
    1 1/2 ts Dry mustard
    1/2 ts Garlic powder
    2 tb Oil
    1/2 C cooked chicken, chopped
    1/2 C wild rice, cooked
    1 C chicken broth

    Sprinkle pork chops with mixture of salt, dry mustard and garlic powder. Brown in olive oil in a skillet. Place browned pork chops in a crock pot. Add cooked chicken and rice. Cover and cook on low 8 hours.

    Chops And Noodles
    8 pork chops
    1/2 C cooked chicken, chopped
    1/2 C wild rice, cooked
    1 C chicken broth
    1 C Low Carb Bar-B-Q Sauce
    2 Tbsn soy sauce
    3 Tbsn dry onion
    1/2 pack Low Carb Elbows

    Brown seasoned chops under broiler 20 mins. In crock pot, combine all ingredients except Elbows. Add chops and sauce to crock pot. Cook on low 8 hours. Serve over Low Carb Elbows.

    Harvest Pork Chops
    5 boneless pork chops
    1 zucchini, cubed
    2 lemons, peeled and sliced
    1 tablespoon Spoonable Brown Sugar Replacement
    1/4 teaspoon ground cloves
    1/4 teaspoon cinnamon
    1/4 teaspoon ground ginger
    1 clove ginger crushed

    Lightly brown the pork chops in a skillet. Place pork chops in the bottom of the crock pot. Sprinkle with ginger. Cut zucchini in half and slice into 1/2 inch slices, place on the layer of chops. Layer lemons on top. Mix Spoonable Brown Sugar Replacement with spices and sprinkle this mixture on top of the lemons. Cook on low for 5 hours.

    . Fabulous Pork Chops
    4 to 6 pork chops
    1 C Onions, chopped
    1 C vegetable broth
    1 T low carb thickener
    1 can of sliced mushrooms
    1 tsp. dried basil leaves
    1 tsp. dried oregano leaves

    Place chops in crock pot. Cover with onions, broth, and mushrooms. Put spices on top. Cook on low for 6 hours.

    Pizza Pork Chops
    6 pork chops
    1/2 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. vegetable oil
    1 medium onion, chopped
    2 cups Low Carb Bar-B-Q Sauce
    4 cups cooked zucchini
    1 cup shredded mozzarella cheese

    Sprinkle pork with salt and pepper and cook in oil about 5 minutes on either side, until brown. Place pork in crock pot, sprinkle with onion, add Low Carb Bar-B-Q Sauce. Cover and cook on low 4 hours.

    Plantation Pork Chops
    4 Pork chops
    2 C Keto Crumbs
    2 tb Butter
    1/3 C lemon juice, freshly squeezed
    1 tb Pecans, chopped
    Salt and pepper
    1/4 c Sugar Free Butter Rum Syrup
    1/2 ts Orange peel, grated

    Cut a in each chop forming a pocket. Combine Keto Crumbs with butter, 1/4 tsp salt, lemon juice and pecans. Fill pockets with stuffing. Sprinkle chops with salt and pepper, Sugar Free Butter Rum Syrup, and orange peel. Cook on low 8 hours.

    15. Pork Chop And Potatoes In Mustard Sauce
    6 pork chops
    2 tablespoons olive oil
    1/2 C cooked chicken, chopped
    1 C chicken broth
    1 T low carb thickener
    1/4 cup mustard
    1/2 teaspoon crushed dried thyme
    1 clove garlic -- minced or 1/4 teaspoon garlic powder
    1/4 teaspoon black pepper
    6 tbsp of Keto Original Potato
    4 ounces of hot water

    In a skillet, brown pork chops on both sides in hot oil. In a crock pot, mix 6 tbsp of Keto Original Potato with 4 ounces of hot water, stir to blend. Put the rest ingredients on top of mashed potatoes. Cook on high 4 to 5 hours.

    Pork Chops Golden Glow
    5 Pork chops; (5 to 6)
    1/4 c Spoonable Brown Sugar Replacement
    1/2 ts Cinnamon
    1/4 ts Cloves
    1 c Low Carb Bar-B-Q Sauce
    1 can Low Carb Apple Sauce
    Salt and pepper

    Brown pork chops on both sides. Combine Spoonable Brown Sugar Replacement, cinnamon, cloves, Low Carb Bar-B-Q Sauce and Low Carb Apple Sauce. Cook on low for 4 hours.

    Savory Stuffed Chops
    4 boneless chops
    1 cup chopped celery
    1/2 cup chopped onion
    1 tablespoon olive oil
    2 tablespoons butter
    1/4 cup chopped pecans
    2 cups Keto Crumbs
    1 egg
    1/2 teaspoon dry sage
    1/2 teaspoon thyme leaves
    1 teaspoon dried parsley flakes
    Salt to taste
    Freshly ground black pepper
    6 tbsp of Keto Original Potato
    4 ounces of hot water

    Cut each chop horizontally, to make a butterfly, pound to thin out. Season with salt and pepper. Mix 2 tablespoons of melted butter with the olive oil in a skillet. Cook celery and onion. Put vegetable mixture into a mixing bowl, add Keto Crumbs, pecans, sage, parsley, thyme, salt, and pepper.

    Place potatoes mix and water in the crock pot, stir to blend. Place chops on the potato mix. Sprinkle with reserved Keto Crumbs. Cover and cook on low 9 hours.

    Spicy Pork And Cabbage
    6 pork chops
    salt and pepper
    1 T low carb thickener
    1/2 C water
    8 oz Cheese Low Carb Spreads
    4 cups shredded cabbage
    3 tart apples
    1/2 small onion, chopped
    2 whole cloves
    1 small bay leaf
    1/4 cup Spoonable Brown Sugar Replacement
    1 cup water
    2 tablespoons cider vinegar
    2 teaspoons salt

    Mix low carb thickener, water, and Cheese Low Carb Spreads. Brush chops with the mixture. Place cabbage, apples, and onion in crock pot. Add remaining ingredients except pork chops. Arrange chops on top of cabbage mixture. Cook on low 10 hours.

    Vegetable Stuffed Pork Chops
    4 double-thick pork chops
    salt and pepper
    1 can green beans, drained
    1 small onion, chopped
    1 green pepper, seeded and chopped
    1 cup Keto Crumbs
    1/2 c. uncooked wild rice
    8 oz Low Carb Bar-B-Q Sauce

    Cut a pocket in each pork chop. Season with salt and pepper to taste. Combine green beans, onion, green pepper, Keto Crumbs and wild rice in large bowl. Stuff pork chops with the mixture. Secure with toothpicks.

    Put stuffed pork chops to crock pot. Sprinkle each pork chop with Low Carb Bar-B-Q Sauce. Cook on low 8 hours.

    1 lb plum tomatoes, chopped
    1 eggplant, in 1/2" pieces
    2 med zucchini, in 1/2" pieces
    1 onion finely chopped
    3 stalks celery, sliced
    1/2 c chopped parsley
    2 tbsp red wine vinegar
    1 tbsp brown sugar
    1/4 c tomato paste
    1 tsp salt
    1/4 tsp freshly ground black pepper

    Combine ingredients. Cook on low for 5 to 6 hours.

    Chuck wagon Chili

    2 c. barley
    6 c. water
    Cover and cook on low overnight. Add and stir in:
    1 (46 oz.) can of tomato juice
    3 T. chili powder
    1/2 tsp. cumin
    1 tsp. crushed, dried oregano
    1 1/2 T. dried chopped onion
    1 T. dried green pepper
    1/2 tsp. sea salt
    1 onion, chopped
    1 green pepper, diced

    Add to chili, cover, and cook all on low for 2 more hours, stirring occasionally

    Crockery Ratatouille

    1 med eggplant cubed
    1-1/2 lbs tomatoes, sliced
    1 large onion, chopped
    1 red bell pepper, chopped
    3 cloves garlic, minced
    1 c. chopped fresh basil or 1/3 c. dry basil
    1/2 tsp salt
    1/2 tsp dried oregano
    1/8 tsp pepper
    1/4 c. olive oil
    2 med zucchinis, slice

    Grease a large shallow baking pan with olive oil. Bake eggplant until golden brown and soft.

    In crockpot, combine tomatoes, onion, bell pepper, garlic, and spices. Mix in baked eggplants. Cook at low 6-8 hours.

    Stir in zucchini. Increase heat to high; cook about 15 min


    1 whole onion, chopped
    3 whole clove
    1 whole green bell pepper, diced
    2 cups tomatoes, diced
    4 cups vegetable stock
    1 cup cooked soy beans
    1 1/2 cups sliced okra
    1 teaspoon salt
    1/4 teaspoon allspice

    Saute the onion and green pepper with the cloves in water until soft. Remove the cloves. Put all ingredients in a slow cooker on high for 6 hours or low for 8-10 hours.

    Spicy Mushrooms

    6 tablespoons butter
    1 large onion, chopped
    2 teaspoons basil
    2 teaspoons oregano
    1/2 teaspoon thyme
    1/4 cup lemon juice
    1/2 cup sherry
    1/4 teaspoon red pepper
    3 pounds whole mushrooms

    Saute onion until transparent. Add spices, lemon juice, sherry and pepper flakes and allow mixture to steep on low for 2 hours. Add mushrooms about 15 minutes before serving.

    Barley Stew

    1 c Millet
    4 c Water
    2 Onions, wedged
    2 large zucchinis, cubed
    1 c Celery, chunked
    1 lb Mushrooms, chopped
    2 Bay leaves
    1/2 ts Basil
    1/2 ts Thyme

    Toast barley in a dry skillet for about 5 minutes. Add all ingredients and cook for 4 hours on high or 8 hours on low.

    Stuffed Green Peppers

    1 package frozen green or string beans
    1 can soy beans
    1 can diced tomatoes
    1/4 cup salsa
    1/4 cup chopped onions
    1 1/2 cups cooked rice
    1 teaspoon Worcestershire sauce
    1/4 teaspoon salt
    1/2 teaspoon black pepper
    2 cups shredded cheese
    6 green peppers, seeded

    Combine all ingredients, except 1/4 cup cheese and green peppers. Stuff peppers. Cover; cook on low 8 hours or on high 4 hours. Sprinkle with 1/4 cup cheese and let it melt before serving.

    Eggplant Lasagna

    4 eggplants, sliced
    1 onion
    1 garlic clove
    1 green bell pepper
    1 cup fresh or 1/2 cup dry parsley
    1 28 oz can tomato puree
    1 small can tomato sauce
    Salt and pepper to taste
    Oregano, basil, or Italian/pizza seasonings to taste
    Olive oil
    1 bag of Low Carb Pasta
    Mozzarella cheese

    Cook eggplants in microwave until done. Chop up peppers, onion, and garlic. Cook with about 1 tablespoon olive oil over medium heat until done. Add cooked cubed eggplants and parsley.
    Put 1/2 vegetable mixture in bottom of crockpot; add 1/2 package of uncooked pasta, 1/2 of the cheese, then rest of vegetables, noodles and cheese.
    Mix tomato puree and sauce together with seasonings and about 1 teaspoon olive oil.
    Cook on high for 1 hour then low for 6 hours, or on low for 8 hours.

    Brown Sugar Cranberries

    2 12 oz packages fresh cranberries
    3 cups Spoonable Brown Sugar Replacement
    2 cups dry wine
    1 cinnamon stick
    2 teaspoons grated orange peel
    2 oranges
    1 cup dry currants

    Mix the cranberries, sugar, wine, cinnamon, orange peel, and orange segments in a crock pot. Cook on high until the cranberries pop. Remove the cinnamon stick, and stir in the currants. Cool to room temperature, then chill.

    Vegetarian Enchilada

    1 can crushed tomatoes in tomato puree
    1 can chunky salsa
    1 can tomato paste
    2 cans soy beans
    1 can diced green chilies
    1 1/2 tablespoons ground cumin
    1/2 teaspoon garlic powder
    5 Low Carb Tortillas
    1 can sliced ripe olives

    In a large bowl, combine the tomatoes, salsa, tomato paste, beans, corn, green chilies, cumin, and garlic powder. Mix well. Ladle about 1 cup of this mixture in to the bottom of a 4-quart electric slow cooker; spread evenly.
    Top with 1 l/2 tortillas, cutting to fit as necessary. Spread on 1/3 of the remaining tomato mixture. Repeat these layers 2 more times, ending with the rest of the tomato mixture; spread evenly over the top. Sprinkle the sliced olives over all.
    Cover and cook on the low heat setting about 5 hours. Serve hot.

  • Almond Chicken

    1 can (14oz) chicken broth
    1 slice bacon, diced
    2 TBsp. butter
    1 lb. chicken breast, cut into 1 inch pieces
    1-1/2 cups diced celery
    1 small onion, sliced( I USED 1/4C. TO CUT THE CARBS)
    1 can (4oz) sliced mushrooms
    2/3 cup slivered almonds

    Pour chicken broth into crock-pot. Cover and turn on crock-pot.
    In a skillet, heat bacon and butter; add chicken pieces and brown on all sides. With slotted spoon, remove chicken to crock-pot. Quickly saute celery, onions and mushrooms in same skillet until slightly limp.
    Add contents of skillet to crock-pot; stir well. Cover and cook on low for 2- 4 hours. Garnish with almonds.

    I was at the store today and didn't have these ideals with me so I was stumped. I bought some Banquet Crockpot Beef Stew mix and that's all I could think of. Thanks, this is new for me but this is wonderful because we have a meal waiting on us when we get home and I no longer have time to cook at home any more.

    Crockpot Swedish Style Steak
    Yield: 6 servings

    2 1/2 pounds round steak
    1 beef bouillon, crumbled
    3/4 cup water
    Salt and pepper
    1 teaspoon dill weed
    1 medium onion, sliced
    1 cup sour cream

    Cut steak into serving-size pieces. Sprinkle with salt and pepper. Place in a crockpot. Add dill, onion, bouillon cube and 1/2 cup water. Cover and cook on LOW for 6 to 8 hours.

    Remove meat. Thicken juices with about 1 teaspoon xanthan gum.

  • Saving my "recipe" for tomorrow. Ended up fixing turkey burgers, baked potato wedges, and tossed salad tonight. Tired after running the brush mower up and down that long driveway! Supposed to get another round of lots of rain tomorrow and maybe some bad weather with it so will be staying inside if it comes early and doing some stuff in here that needs to be done.     I found this recipe in an email this morning. It sounds great to come home to after a long day. You could always make faux mashed potatoes the day before to heat up and add a veggie......MMMM!!

    Just be sure to watch the carb count on the packet of dry stuff. I have found them with just 1-2 carbs per serving.

    Easy & Good Crockpot Beef Roast

    1 Beef Roast (sized for your crockpot)
    1/2 Cup of Water
    1 Packet of Ranch Dressing Mix
    1 Packet of Italian Dressing Mix
    1 Packet of Brown Gravy Mix

    I have used other seasoning mixes with great results, garlic and
    herb, au jus mix, onion soup mix etc.

    Put roast in crockpot, pour water around the base. Sprinkle all 3
    dry seasoning packets over roast. Cook for 6-7 hours on low.
