Gotta share what I cooked for dinner

I had to take something back to Walmart so I decided I wanted something different for dinner, so I started by getting some low carb tortillas and then got some Carb Focus creamy southwestern chicken soup-(YUMMY) to use as the sauce, got some Lime and Garlic salsa, some cut up pork, some lettuce, carrots, green peppers to make dinner.

So, I took the pork and sauteed it with onions and green peppers and then I put the Carb Focus soup in it which is 9 carbs per 1 cup, it's 2 cups total. Dd loved the soup!!! Then I put it on the tortillas, with some shredded cheese and salsa, a simple salad, and we have dinner!!!

Gosh I think that Carb Focus soup is wonderful...just had to share!!!

She has cheated a few times

but I have replaced alot of her normal foods with low carb alternatives so even though she cheated, like yesterday she spent $4 on junk food at the Boys and Girls club, the rest of the time at home she is eating good. I told her it's up to her to decide whether to do it right or not. She can have junk food and snacks, low carb ones. She likes alot of the low carb products, but she had extra money, meant for the book fair in her pocket and she saw everyone else eating junk so she bought it too. I think I'm gonna buy her some peanuts or something so she can take with her so she won't feel tempted.

Bought those Atkins crunchers chips-YUCK!

I like the bbq, it's edible, but the original tastes like the bottom of my shoe. I even tried eating it with salsa...it's just not right...

Has anyone tried this product???

I made the most delicious low carb spaghetti

Just like on Low Carb and Loving it! I used the Spaghetti Squash and it was good! I gave a piece to dd and she ate it and then requested her own plate. I am definately gonna have to get more of this. Does anyone know if you can freeze the squash once you've cooked it and 'noodled' it?

spaghetti squash

leasmom, I freeze everything, and we love spaghetti squash also. To freeze it I put it in one of those zipper bags not the ones that you have to pinch together but the ones with the actual zipper on it.I fyou have one of those seal ameal bag machines (mine is broke)that is even better. It will be alittle watery after so you will have to drain it good.I actually think its better not to freeze it, but it is okay to freeze.

I was just going through my September 2004 Better Homes and Gardens magazine and found this offer that I thought some of you might be interested in. Go to www.bhg.com/freebook and you can receive your own digital copy of Low-Carb Slow Cooker Recipes
