I made a new creation tonight that took away my PMS sweet tooth.


Cinnamon "Sugar" Pork Rinds w/ Cinnamon Cream Cheese


I took pork rinds and lightly sprinkled them with water( the only non-carb thing I could think of to make them wet so that the topping would stick to it) then put them in a bag with a mix of cinnamon and Splenda then shook them up.

Then I made a dip out of softened cream cheese and more cinnamon/Splenda mix and started dipping away with the pork rinds!!

Although these arent as good as a 1/2 bag of Reeses Cups, they worked on my sweet tooth!!

That sounds good, I think I'll make that tonight!

I saw somewhere that some people mix sugar-free jello with cream cheese and I was trying to think of what I could eat with that...I'll try these and use the sugar-free jello!!!

Leasmom,

Did you try them with the jello tonight? If so, how did they turn out?

I just got through eating not just the rest of one zcarb bar but TWO of them. They were really good but my stomach doesnt feel so good right this minute. I shouldve stopped at just a piece of each but since it the TOM, I was craving choc. bad! BTW, the choc. and pnut butter zcarbs are great too! ;-)


I joined Curves today. Im hoping to whittle away at my butt. It is one of the biggest parts of me, lol!


You are going great with the walking. I know that when I walked 7 miles a day the first time that I lost a lot of weight, I felt GREAT!! Keep up the good work!!

Had to come back and share these! They sound soooo good!


Im putting this stuff on my list for tomorrow and going to try to make some for Easter.


Frozen Mint Patties

1 pkg. (envelope) unflavored gelatin (0g)
1 tbs. boiling water - (0g)
1 c. heavy whipping cream (0g)
1 oz. cream cheese (1g)
3 drops mint or peppermint extract (?g)
10 packets splenda (10g)
1/2 tsp. vanilla extract (1g)
1 oz. unsweetened chocolate, melted (2g)
* We used 1 packet of Nestle Choco Bake, Premelted, unsweetened
chocolate flavor. (2g)

Soften gelatin in the boiling water. Add all ingredients into a blender and blend well.
Chill for 10 minutes and spoon onto parchment (wax) paper and freeze.
Pack in an airtight container.

Servings 20

Entire Batch 14 grams

Individual Mints are .7g each

I didn't get to make them!

I ended up spending half the day painting my mom's mother's day gift. I'll check into getting them tomorrow.

Dd has a surprised birthday party she was invited too on Saturday that we just found out about today, so we went and got the girl a gift and card and giftbag, so I was completely thrown off...I'll try it tomorrow though!

Read this tip today.........

Using Lucky Leaf Lite Cherry or Apple Pie Filling....... you can make cinnamon apples, sauces for pork, pie filling topped with fresh whipped cream....use your imagination.

The above desserts are about 7 carbs each by the label on the can.


Not bad for a nice dessert!!

Lucky leaf...now where did I see that brand at?

I would love to have some apple pie...you can use Atkins pie crust recipe to make the crust. Ooh and pork chops with fried apples-yummy!!!

I think that most store carry the Lucky Leaf brand but I dont know if they carry the lite version.

Ill let you know about WalMart tomorrow. Good Idea with the pie crust too. I could go crazy with low carb ice cream and the apples and cinnamon!!

Here is one of the recipes using the SF pudding


1 pkg. chocolate fudge s/f pudding
1 c. heavy cream
3/4 c. cold water
4 oz. cream cheese

Beat pudding, cream and water until thick. Beat in cream cheese and refrigerate
This is a wonderful recipe! One change I made when making recipe the second time was to mix the cream cheese and water before adding pudding mix and cream. I had a problem with the cream cheese blending in well when adding it last.I've also used the vanilla flavored pudding mix. It's delicious too.
