Low Carb Dinner Ideas Since there are so many of us who are on one of the low carb diet plans, I thought that I would start a place where we could share menus, recipes and ideas.

You can use them like potatoes

mashed, baked, boiled, and fried. You can eat them raw and in salads...you can probably use them as substitutes in dishes like potato salad...I don't know but maybe I'll try that!! I haven't cooked it yet but I am hoping to make it mashed tomorrow just like potatoes. I really want to try them fried like old fashioned fried potatoes and onions...that should be really good.

I'll let ya know how they turn out tomorrow!!!

Mmm, all these snack ideas sound good! I'd like to try them in potato salad. If anyone does it soon, let me know how it is!

Im going to try the turnips in potato salad but Im going to use my mothers recipe for dressing....it has mustard, mayo, sugar( Ill use splenda), an egg and vinegar.....I think. It is one that is cooked then you chill the salad. I grew up eating this and it was the best.


What else are you ladies trying???

I had zucchini hash browns!!!

Yesterday...It was good but very soft because of the water in zucchini. I would like to fry it harder though, but it was good with scrambled eggs nevertheless. The jicama I've yet to get too. I'll do it today. I just haven't really cooked, it's hot here.

I got some cauliflower too yesterday and I'm looking for recipes using that. I've been waiting for cauliflower to go on sale so it was 10 lbs for $10-(that is NOT a deal), but I got 1 that was a lb so it was a little over a $1.

Did anyone ever try the recipe I posted about low carb biscuits. It's really good!!! I'm gonna make them again soon and I hope to find some low carb jelly or at least some sugar-free. I've been wanting jelly lately. We'll off to make breakfast and get dd up for school...we're 2 hrs behind ya'll!!!

Leasmom, I think that you got a great deal on cauliflower! Ours is $2.39 a head --maybe 11/2 lbs.


I made Atkins cranberry and orange muffins last night. I would say that they are OK nothing to brag about. If you are needing something like this, it will sufice. They are kinda bland.

On the other hand, I bought a ZCARB bar at WalMart and they are fabulous!! They have no carbs in them! They have about 6 different flavors. The one I had was dark choc. with macadamia nuts....MMM!!! I only ate 1/2 of it ( and it is SMALL) because I felt like I was doing something very bad!! I will have to watch with these because I could easily go overboard with them!!

I went back to turkey pepperoni chips today. Boring but much safer ;-)

I heard good things about those Zbars

they won't cause you to have any problems...but I know what ya mean...I saw some Atkins Endulge icecream bars at Walmart today and I am glad I walked past cause I'll be in trouble if I didn't...I would eat 2 of them. I will get them soon but it'll take some serious self control-LOL!!!

Patrice - mmm, I got the chocolate peanut butter ones. It's peanut butter and vanilla ice cream swirled and dipped in some really good chocolate. Yup, they do talk to you from the freezer! lol!!

Now I definately will have to go get it on Wednesday!!!

I saw the swirls...oh gosh!!! Wednesday can't come too soon...too bad it's parent teachers conference tomorrow or I would do it then!!!

How much sugar are in these zbar things? There's tons of diabetes in my family so I'm trying to keep the sugar down too.
I'd like to have something yummy that I won't feel guilty eating for a change.
