Peanut Butter Protein Bars

3 tbsp sf peanut butter
2 tbsp butter
4 oz cream cheese
1/4 cup splenda
1 tsp vanilla extract
2.5 scoops vanilla protein powder

Melt butter, p-nut butter & cream cheese in microwave. Mix in splenda & vanilla. Add protein powder 1 scoop at a time, you will need to use your hands towards the end. Press into small baking pan & chill until firm. Makes approx 6 bars at 3 carbs each.

Variations:

1. Make two layers, one with vanilla protein powder, and one with chocolate. (cut these into smaller portions as they are doubled)

2. German chocolate type bar: Make one layer chocolate (add melted unsweetened chocolate to make it fudgier) and add extra splenda to compensate for the extra chocolate if usign unsweetened). The second layer, omit the peanut butter and add 1/2 cup pecan pieces and 1/2 cup coconut.

Can I buy protein powder at WalMart or do I have to go to a specialty store??

You can buy it at Walmart. They do have at least one brand that is low in carbs. (Cant remeber the name of it, since I usually order mine and its a different brand.) Just watch the carb count on them, and pick out the lowest count one you can find.

I would assume that it depends on the carb count of the protein powder as to how many carbs in the bars, right?

Just as a guide to go by, how many carbs are in the kind that you use?

Hmm I answered this hours ago but the post isnt showing up. My net has been in and out, today. so maybe it dindt take because my net flashed out when I hit post.

Anyway...

The carb count will depend on the carb count of your protein powder.

To give you an idea, the brand I use has 2 carbs for one level scoop. So try and get something close to that, if possible.
