Fried Rice for One

Fried Rice for One
1 cup cooked & cooled rice
1/2 cup cooked meat, cubed
1 egg, beaten
Handful of frozen mixed vegetables
1/2 tsp minced garlic
1 small onion, chopped
little bit of oil for the pan
3 tbl low sodium soy sauce
drizzle of sesame oil if you have it
Saute onion in the pan with oil (NOT the sesame oil at this point) until it starts to soften. Add garlic and saute another minute or 2. Add egg and scramble. Remove egg, garlic and onion to a bowl. Put meat, vegetables and rice in the pan. Cook until hot and rice is separated. Add egg mix back to the pan and stir. Add soy sauce, mix well, and add a bit of sesame oil if you have some.
