In fact, that's what we had for dinner today. With just me and my husband we usually have some leftovers most days and when they add up then it's time to use them up. And it also helps with the grocery bill, have you noticed how prices are going up?

We very rarely have leftovers from a dinner, we occassionally have desserts left over but I usually only cook what I need for that night. I hate reheated pasta.

If you have leftover potatoes that you have boiled in the skins.
You can make potato salad or slice and fry them with some seasoning salt for a new side dish.
You can also peel the skins off and slice and add to a white cream sauce or cheese sauce for scallop potatoes.

You can also use left over roasted meats chopped, sliced potatoes, and onion chopped or sliced, then heat or fry to make hash.

You can also use leftover chopped onions, tomatoes, sliced lettuce and grated cheese for a quick tossed salad.

Or use left over Taco meat placed on tortilla chips. Heat in microwave then add above combination to make a quick Taco Salad.

I use leftovers all the time.

I have used leftover roast in stews and leftover mashed potatoes in potato patties.

I sometimes use leftover taco meat in spaghetti sauce. And if I chop too much lettuce for the tacos Maddie will eat it plain or put dressing on it and eat it like a salad. She likes so many raw veggies I call her Bugs sometimes. Her favorite is a carrot right out of the fridge. She won't even let me peel it.

I use leftovers a lot sometimes out of "have to" other times because just want to.

I don't mind eating leftovers but sometimes we have so many I can't keep up. As my dks have grown older, they often aren't here for dinner yet I still cook for 5 people! I find some things like chowders and soups often taste better on the second day. I do have to say I am not a big fan of leftover vegetables because they often get mushy when reheated.

Yes I think soups/chili and Spaghetti sauce as well as potato salad taste better the next day
