Hi Jen
I have the recipe you are looking for - we have Crumpets just about every Sunday for afternoon tea.
You will need to convert the Metric measurements
225 grams Cake Flour
30ml sugar
10ml Baking Powder
2 extra large eggs
45ml oil
125ml buttermilk
185ml milk
- Sift the dry ingredients into a bowl
- In a separate bowl, beat the eggs with the oil, buttermilk and milk. Stir the liquid into the dry ingredients and mix until the liquid is incorporated. Do NOT overmix. a few lumps may remain in the mixture. Leave to stand for one hour before using.
- Lightly grease a heavy based pan and heat until fairly hot over low heat. Drop spoonfuls onto the pan. Turn with a spatula when the bubbles on top have burst.
- Serve warm, buttered and topped with assorted berries (or jam) and cream
