Tasty for everyone?

Looking for some Gluten Free Side dishes to take to a friend's gathering in a few weeks. Anyone have anything that they've had and thought was tasty enough for even people that aren't gluten free. This way the same dish would work for everyone!

Gluten Free Coconut Shortbread Cookies

I made the following recipe for a gathering I attended last night, and they were delish! These cookies are not too sweet, and exceptionally close to regular shortbread. Enjoy!!

Gluten Free Coconut Shortbread Cookies

Makes approximately 24 cookies


  • 1 ½ cups Gluten Free All-Purpose Baking Flour
(I used Bob’s Red Mill Gluten Free 1 to 1 Baking flour)
  • ½ cup Coconut Flour
  • 1 cup Butter (salted)
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla Extract


  • Whisk the flours together in a bowl.
  • With a mixer fitted with the paddle attachment, beat butter, sugar, and vanilla until pale and fluffy (approx 5 mins).
  • Reduce speed to low and slowly add the flour mixture until combined.
  • Divide dough in half, shape into a disk; wrap in plastic wrap. Chill until firm, about 1 hour.
  • Preheat oven to 350*F.
  • Working with one disk at a time, let the dough soften, kneading dough until smooth and pliable. Roll out dough on a lightly floured surface until ½-inch thick. Using round cookie cutter, cut out shape and space onto cookie sheet 1-inch apart.
  • Bake until edges are pale golden. Transfer to wire racks to cool. Can be stored in an airtight container up to one week.

Helpful tips

  • Add food color when using mixer to combine butter mixture and flour mixture for colored cookies.
  • Use one egg white and 2 tablespoons water and apply to tops of cookies with a pastry brush followed by bakers decorator sugars for decorative touch.
  • These cookies will not puff or spread, be careful not to overbake.
