Eggplant fritters

Eggplant Fritters (from

1 egg
2 teaspoons baking powder
2 tablespoons flour
1 medium (or 1 cup mashed) eggplant
1 tablespoon butter
Peel, slice, and cook in salt water until tender the eggplant; drain and mash. There should be about 1 cup. Add beaten egg, butter and flour. Drop into hot grease and fry until brown, or cook like cakes, using just enough grease to turn them.

I don't measure so just cook the eggplant, then add until it looks right. I DO measure the baking powder though! Yum yum. I need to buy some more eggplant now. I've made it with both purple and white eggplant--both are yummy good.

Peel and dice 1 large or 2 small eggplants. (This will
look like an awful lot of eggplant, but by the time it
cooks up it's less than half of what you started with.)
Cook in boiling salted water until tender. Drain very
well. Mash thoroughly. Add 1 egg, slightly beaten,
1 small onion finely minced, 1/2 tsp. sage (or poultry
seasoning), salt and pepper to taste. Stir in enough
flour to make a fairly stiff mixture. Drop by teaspoonfuls
into a small amount of hot oil and brown evenly on
both sides.
