Eggplant fritters

Eggplant Fritters (from http://southernfood.about.com/librar...0/bl00810f.htm)

1 egg
2 teaspoons baking powder
2 tablespoons flour
1 medium (or 1 cup mashed) eggplant
1 tablespoon butter
Peel, slice, and cook in salt water until tender the eggplant; drain and mash. There should be about 1 cup. Add beaten egg, butter and flour. Drop into hot grease and fry until brown, or cook like cakes, using just enough grease to turn them.

I don't measure so just cook the eggplant, then add until it looks right. I DO measure the baking powder though! Yum yum. I need to buy some more eggplant now. I've made it with both purple and white eggplant--both are yummy good.
