Help! Bumper apple crop!
"Our apple tree is producing a bumper crop and I am looking for suggestions on what to do with all of them (other than pie). Also, is it possible to freeze apples?"

Can you help this reader?

I have used an apple corer and cut up apples and froze them. They come out OK, I used them for pies, but try this:

This is a recipe my ex-mother-in law gave me, and it uses about 4 cups of chopped up apples, it is easier than making pie and it is really good.

2 cups of flour
1 cup of sugar
1 cup of margarine
1 egg
3 tbsp milk
1 tsp of baking powder

Mix together and put in a greased 9 x 13 pan.

MIX togher in a bowl:
4 cups of any kind of chopped up fruit (i use apples a lot)
1 large package of jello (just the powder, don't make jello)

Spread on the base, and then make a struesel:
1 cup sugar, 1 cup flour, 3/4 cup margarine, sprinkle this on top and bake at 350 for 40 minutes.

Bumper Crop Of Apples
I hope you'll try this recipe ,we have used it for years and tastes awesome.


6LBS. apples 1 TSP. ground mace
Peel and core apples 6 TSP. salt
3PTS. vinegar 2 TSP. cayene pepper
2LBS.brown sugar 2 TSP. ginger
2 TSP. ground cloves 2 OZ. garlic
2 TSP. pepper

More sugar if using crab apples!!

Mix together and bring to a boil. Slowly boil for 2 1/2 hours.Using hand blender, puree this mixture.Pour hot into jars and seal.

apple bundt cake has an apple bundt cake recipe that is divine with cream cheese frosting!! I haven't tried freezing this cake (always gone too quick), but I bet it would make a great addition to a Christmas baked goodie plate to throw in several slices or even half a bundt--I would think waiting till thawed to frost would be the wiser option...but never tried at all so not positive.

Speaking of apple pies....measure your spices as heaping spoonfuls and refrigerate the assembled pie overnight before baking. I happened upon this accidentally when I could only get one of the two pies baked the night I created them. Both pies were eaten by the same people and though the first was fabulous, the second was above and beyond that. *grin*

You could probably throw chopped apples into cinnamon rolls; make applesauce--or applebutter; apple-glazed pork chops; apple muffins....

When I have an excess of apples, I make apple butter, both smooth and chunky. I have also canned apple slices. Most of my canning recipies I get from the Ball Blue Book on canning. Check your local library.

Freezer Apple Butter Recipes
2 quarts. unsweetened applesauce
1 qt. sugar
1/4 cup vinegar
2 tbsp. cinnamon (more if desired)
Put above mixed ingredients in a crockpot. Cover with 3 paper towels (no lid), set on low and cook for 8 hours. Put in plastic containers and freeze until ready to use.


1 cup apple juice
8 cup applesauce
4-5 cup sugar
2 tsp. cinnamon
1/2 tsp. cloves
1 tsp. allspice
Combine all. Pour in crock pot. Cook 5 hours on low with lid on.
6-8 hours on high with lid off. Put in containers and freeze.


16 oz. can jellied cranberry sauce
15 oz. jar unsweetened applesauce
1 tbsp. margarine or butter
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. allspice
In medium saucepan, combine cranberry sauce and applesauce. Cook over medium heat until cranberry sauce melts. Add remaining ingredients, blend well. Pour into 4 clean 8 ounce jars or moisture proof freezer containers. Cover and screw lids on firmly, let stand until cool. Stores in refrigerator up to 3 weeks or freeze for 3 months.

Idea for excess apples
When your through trying all the great recipes (Mmm Mmm) others have given you. Try an old basic 'applesauce'.

One year I was overwhelmed with apples and a friend had a 6 month old baby. So, I had her give me old baby food jars and I would return them with fresh applesauce for her son. She loved it and so did he. However, I'm not a canner and only supplied her with a few meals at a time, so they wouldn't go bad. She felt great about giving her son something all natural and I felt great about saving her some money. This was years ago and I don't remember my recipe, but I'm sure there is one somewhere on this web site (It has everything else).

Sorry I have no recipe, but maybe I gave you a idea for some of those apples.
