  • Sweet And Sour Red Cabbage

    1 med onion, chopped
    1 granny smith apple, diced'
    3 TBSP bacon drippings or olive oil
    1 c water
    1/4 c grenadine syrup (optional)
    1/4 c. red wine vinegar
    1/4 c red currant jelly
    2TBSP sugar
    1/2 t salt
    1/2 t ground cinnamon
    1/2 tsp pepper
    1/4 tsp ground cloves
    1 med size red cabbage, shredded
    1/2 tsp cornstarch
    1 tsp water
    garnish: chopped cooked bacon

    Saute' onion and apple in hot bacon drippings in a skillet over med low heat for 5 mins
    or till onion is tender. Add 1 c water, grenadine and next 7 ingredients, bring to boil.
    Add cabbage and tightly cover. Bake @ 350' / 1 hr 15 min or till cabbage and apple are tender.
    Return skillet to stove top, stir together 1/2 t cornstarch and 1 tsp water, add to cabbage mixture,
    bring to boil. Boil stirring constantly 1 min or till thickened.
    Garnish if desired.
    Yield 6 to 8 servings.
