Hot Pepper Jelly

Red or Green food coloring

Place chopped peppers in blender with vingar and blend.

Pour mixture into large boiler and add sugar.

Bring to a hard rolling boil and boil for 1 minute.

Strain through sieve or cheese cloth. Let strain well.

Return juice to boiler and bring to a boil again. Boil 5 minutes.

Remove from heat, and add Certo and food coloring.

Pour into prepared jars, add heated lids and tighten rings. Turn jars upside down for 5 minutes. Turn upright and allow to completely cool before storing.

Makes 6 (1/2 pt) jars.

You can use any combination of hot peppers. I always color my hottest combinations red and the milder combinations green so that I know by sight which I am getting when I go to use it.

This jelly will get a little hotter after it sits for several weeks.
