Pinkie Winky fresh spinach

My husband saute fresh garlic and Spanish Olives in a little olive oil. Then when its a little brown he adds fresh cleaned spinach. He then stirs abit and puts a lid on top.It sorts of wilts and and saute at the same time on a low flame. Its so good that i can eat it all by myself. Good luck.

spinach ideas

I like fresh spinach leaves on a turkey sandwich, whole wheat bread. It's delicious, don't even need mayo!

I also just tried this recipe from a magazine last week and it was delicious.

Spinach Couscous

Saute 1 or 2 cloves garlic in a bit of olive oil one minute. Add 4 cups spinach leaves, saute 2 more minutes. Add 1 cup of cooked couscous. Salt and pepper to taste Serve with fish, chicken, pork. It's really good!! I didn't think it would be but it is, and it's so fast!

I love spinach!! I go through a five pound bag every week..
maybe I ought to put together a spinach cook book!

One of our favorites is spinach and eggs.
This recipe serves three people.

3 cups of spinach leaves - I prefer baby spinach
1/2 cup cottage cheese
6 eggs
Few drops of Tabasco
1/4 cup or more of shredded cheese of your choice- I use Italian blends, Mozzarellla, Mexican Blends

Chop the spinach -- we like ours kind of chunky -
Put it into a microwave dish, cover and cook for 1 minute.

Add the cottage cheese and blend well- this will cool down the spinach.
Add the eggs and Tobasco. Stir until well blended and cook for 2 - 3 minutes on full power. Stirring frequently to keep eggs from being in one huge chunk!
When they are nearly cooked through - add the shredded cheese and cook for an additional 30 seconds.

I use a Corning Ware dish so I serve right from that...no messy cleanup!

We serve with toasted English Muffins.
