Rich Chocolate Icing


    60g butter
    100g dark chocolate, chopped
    1 tbsp cream

    Put the butter, chocolate and cream into a small heatproof bowl. Bring a pan, half full of water, to the boil and remove from the heat. Place the bowl over the pan (don't let the base of the bowl sit in the water) and stir until the butter and chocolate have melted and the mixture is smooth. Leave to cool slightly until the icing is spreadable.
