Boiled Icing

    Boiled Icing

    1 1/2C sugar
    1/8 tsp cream of tarter
    1 tsp vanilla
    3/4C boiling water
    2 egg whites,stiffly beaten
    few grains salt.

    Combine sugar, water, salt, and cream of tarter. Stir until dissolved. Boil to soft ball stage (236 F) Pour slowly, beating constantly, over egg whites. Add flavoring. Beat until thick and creamy.
