Question Does anybody do any home canning?

Hey All...I have helped in the home canning process here and there over the years, but I feel that I may be ready to try it out on my own. I have been looking around for my own equipment, and cannot decide between a water bath canning pot, or the steam pressure pot. Does anyone else prefer one or the other? Which would be the best to start out with?
Do you have any favorite recipes?

blushing canning

Hi Kaycee,
I haven't done much canning I will tell u tht the only canning that i have this year was tomatoe's. The only thing i done was to put the tomoatoes in hot water for a few seconds theni peeled them , cut them up in quaters' theni poured them into hot sterlized jars & sealed them & then i cover the packed jars in a big pot with water covering the top of the jars for about 30 or 40 minutes then I set them to the side to cool . easy process for me , they all turned out good . I only canned 6 jars. lol i didn't have too many tomotaoes to can , But thought i would try it &see if i could get some canned . Now next year I will plant more tomatoes , knowing that I can can tomatoes & etc , lol. Good luck, Donna

Hello. I have done a lot of canning. The canner you want will depend on what you are canning. Somethings you can in the water bath canner, tomatoes etc. Other things need pressure, meats, peas, green beans, corn etc. I suggest you get a Ball Blue Book (got mine at WalMart for less than $5.00) and go by the method they recommend. Please be sure to go by their instructions as it can be hazardous if not followed correctly. Good Luck. P.S. I love canning.

As long as the water can be at least an inch over the tops of the jars, you can use any large pot with a snug lid for a water bath canner. Just put a dish cloth or towel in the bottom so the jars are cushioned. I did that for years before getting a water bath canner. My old pot didn't hold very many jars at a time, but I started out just doing jam in little jars, so it didn't used to be a big deal. Now I'm happy to have a big water bath canner, though.

Now I also have a pressure canner, and I love it for some things but not others. (Still learning, I guess.) Barbara is right that it depends on what you are canning which canner to get. Some things are only safe to do in a pressure canner.

I've also found a lot of good recipes on many states' county extension websites, which are affiliated with a major state university. They also update the safe home canning guidelines regularly, so you can be sure you're up to date. And if you garden, all the gardening info is right there, too.

I vote hands down for the Pressure Cooker

I've been canning for quite some time and I must say that I really love the Pressure Canner. My collection has grown to 3 so far. Being blessed with virtual year round gardening in the south there's always an abundance of fruits and vegetables. Right now I'm pressure cooking a pork roast which simply means that it will be done in 1/2 the required time of conventional cooking. Last month I canned over 144 quarts of veggies. I also can chicken, pork, beef, soups, stews, gumbo's, jambalaya, spaghetti meat sauce and so much more. Good luck.

The majority are correct here. You need both a water bath and a pressure cooker. Some things, such as tomatoes, only need a water bath. Others items, like meat, definitely need pressure to be safe. You may hear older people say they never pressure cooked and everything was fine but don't go by that. They just got lucky and didn't get botchulism. Just be sure, as someone else mentioned, to follow the recipes and times. It's really important.

canning

I have canned for years and believe me, you need a pressure canner AND a water bath canner.One is for acid type foods and the other is for non-acid type foods. Please, please,please, get a good canning book and you will do fine. I learned to can on my own using a Ball canning book.

Hi Annette,I agree with you 100% on the canning book, When i canned my tomatoes , it was trial & errorr, but so far they turned out fine, I just got lucky , i guess. I have always been afraid to use a pressure cooker or canner. I have never used one before so that is why i went the way i did. Next time I think i will get my canning book out to make sure everythng is right for sure.
Its better to be safe than sorry for sure so no one won't get sick.
Would u mind me asking u this question? I am new at this site & not sure how to or where to share craft ideas or reciepes at, Do I just click on any of the topics & join in the message boards? Or what? Excuse me for not knowing how to use this site. I wouldn't mind a bit to share ideas & meet new friends, I don't get out much , I work part time then i'm home all the time. For the last 3 wks i have been at home with a pinch nerve & inflamation in my back so i thought i would join in here & meet some nice friends to get craft ideas & reciepe ideas' & share my ideas too . Thank you

Canning Tomatos

;-) donna, I always canned my tomatoes by the water bath method. They always turned out nice. Keep it up, just be sure and process them for the required time.
As to chatting, you just jump in anywhere. There is instructions for doing what ever. You can't go wrong....Everyone in the chats are very friendly and ready to help, that is what this forum is all about.

Hello Annette,
Thank you for the info. On my tomatoes when i poured them in the hot jars , i put them down in hot boiling water for 30 or 40 minutes, then i took them out to cool.
Now that i know i can jump right diffrent topics, i will be sharing great ideas ., on crafts & etc. Nice meeting u .
