hi all. im new to this board, but i've got a question hubby is buying cannec veggies in bulk, i need to know if i can freeze store bought canned veggies. :

If they are already canned there should be no reason to freeze them. Tin cans of veggies can explode in the freezer. They should have a good long shelf life just being canned.

thanks for the reply. but i dont want to freeze them in the can, but when i open up a bulk size can and cant use them all at one time is it ok to freeze the rest until next time, thanks for the help:) 8-)

I have froze canned veggies that we did not finish and they have turned out fine.

Yes, you can absolutely freeze any kind of leftover canned vegetables. Just place the remainder in a freezable plastic/Tupperware conatiner. :)

Can I freeze canned jalapeno peppers? Alternatively, how long will canned pickled things last in the fridge?

I take vegtable leftovers and freeze them in a big butter tub and keep adding any leftovers to the same tub. When it comes time for stew, I have mixed veggies.

Freezing Yellow squash
 
I wondered if I could just slice and freeze yellow squash (washed before of course) or do I have to blanche it first? I thought to just place it on a tray, freeze then place in plastic bags for casseroles or whatever.

that's the way my sister does it. In fact , alot of gardners' are doing away with blanching all together. i still do my corn though.....
