I even freeze my bananas in their skin. They slip right out into the mixing bowl when it is time to make banana bread.

All great suggestions, but I have to tell you, too late. I ended up throwing them in the compost. Next time I'll remember the gasing thing. As for now, I came back from camping with some over ripe bananas and will make banana muffins with them this week.

Ooo...can you share the recipie?
My best friend used to make a banana bread but she lost her (Nana's) recipie. She been looking for one close to hers ever since.

My Grandma's Banana Muffin recipe (because the old recipes are the best!!)...

1/2 cup of oil
1 cup brown sugar
1 tsp vanilla
1 egg
1 cup mashed banana (about 2 bananas) -- I use over-ripe and frozen then thawed, they seem juicier.
ADD: 1 3/4 cup flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp nutmeg
1/8 tsp salt

Cook 15-20 minutes at 350.

I usually make a triple batch so that my entire oven is full. That's one loaf (same recipe makes loaf, but longer cooking time), and 18 muffins.

I'll post over in recipes too.
