Pork Tenderloin Stir-Fry

Pork tenderloin (for stir fry)
1 pork tenderloin cut in 2 halves
Approx 2-3 cups chicken stock
2 tabs soy sauce
2 tabs hoi sin sauce (or bbq sauce)
1-2 cloves crushed garlic
1/2 teaspoon ginger powder.
In a sauce pan bring stock with all ingredients excluding pork to gentle simmer. Then add pork.
Cook until meat is tender and juices clear approx 10-15 mins.
When cooked sit for 5 mins then cut into 1cm slices.
This can either be refrigerated until you need to cook the stir fry or added to stir fry already to be served.

Can also be added to fried rice adding a little extra soy sauce.

Any stock left makes a great asian styled soup adding a whisked egg, cooked rice noodles and some veg, with chopped cooked chicken or left over pork from above.

Congrats Kathy!!

I used a package of frozen stir fry veggies rather than cut up fresh veggies.
