Chicken Lo Mein

CHICKEN LO MEIN
This is even healthier with the whole wheat pasta!

1/2 box whole wheat spaghetti, cooked and drained
1 lb boneless skinless chicken chunks (or 2 boneless skinless chicken breasts, cut into 1-inch cubes)
vegetable or peanut oil (I used peanut) for the pan
2 cups snow peas, trimmed
1 cup carrots, julienned
1/2 cup sliced mushrooms
1 small onion, diced
1/2 cup cole slaw mix (optional, but it's way cheaper than adding bok choy!)
1 tsp sesame oil

SAUCE:
2 tsp cornstarch
1/4 cup soy sauce
2 heaping tbl Hoisin sauce
1 tbl minced garlic
1/4 tsp ground ginger
1 tbl sesame seeds

While pasta is cooking, stir-fry the chicken in a large skillet. Drain and reserve in a bowl. Wipe out the skillet and stir-fry the vegetables for 5 to 6 minutes. Add sauce and cook 2 minutes until it thickens. Add chicken and pasta. Just before serving, stir in a little sesame oil.

NOTE: This would also work well with the pre-cooked frozen shrimp. Just add it when the pasta is added to the vegetables and sauce, and heat gently, stirring until shrimp is heated through.

VARIATIONS: Vegetable combinations can vary & are limited to your imagination. Also good:
2 or 3 baby bok choy, chopped
1/2 onion, chopped
5 ounces mushrooms, sliced
1 carrot, sliced diagonally
Using these vegetables, it looks like this:
