This is strange, I don't think of this as an ethnic food, but I guess Aussie qualifies!!
Pavlova is a dessert, very popular in Australia and New Zealand
Here is how you make it:

4 egg whites
1 cup castor sugar (very fine, white sugar)
1 tablespoon corn flour
1 tspn white vinegar

Beat egg whites in a small bowl until very stiff, gradually add in sugar, beat until dissolved between each additions. Fold in cornflour and vinegar. Spread meringue onto a baking tray, that has been lined with paper and marked with an 18cm circle. For best results do not flatten meringue, just pile it on!
Bake in a very slow oven about 1 1/4 hours or until edges are dry to touch. Turn oven off and leave meringue in there, with door ajar.
Before serving, cover with whipped cream and fresh fruits.
or, whipped cream and crunched up peppermint crisp, or chocolate flake crumbled.
So many things to put on top!!
This would serve about 8 people.
Pav. can be made 4 days ahead if stored in an airtight container, (not creamed or fruited!). Not suitable for freezing or microwaving.
Very sweet, but very popular. Outside should be crisp/crunchy, inside soft and 'marshmallowy' sort of.
