Chicken Lo Mein
2 Tbsp. oil
1 lb. boneless, skinless chicken breasts, cut in strips
2 cups chicken broth
2 Tbsp. soy sauce
1/2 tsp. sugar
1/4 tsp. ginger
1/8 tsp. garlic powder
1 16-oz. pkg. frozen mixed vegetables (I usually use a mix of broccoli, green beans, mushrooms, and water chestnuts)
4 oz. angel hair pasta, uncooked
2 Tbsp. water mixed with 2 tsp. corn starch
Heat oil in a large skillet over medium to medium-high heat. Stir-fry chicken for 2-3 minutes. Stir in chicken broth, soy sauce, sugar, ginger, garlic powder and vegetables. Bring to a boil and stir in pasta. Redue heat to low, cover and cook for 5-8 minutes until pasta is done. Blend water with corn startch and add to pan. Cook about two minutes, stirring, until thick, and serve.
