    This is how I make my chicken salad and it always gets rave reviews.

    Place a whole chicken in a pan and season liberally with any spices you like. I use a LOT of garlic, onion powder, basil, oregano, anything goes. Cover with water and boil until tender.

    Remove and alow to cool, clean chickn from bone. Be very careful with the bones and gristle. My kids will stop eating at the first sign of either no matter how good it is.

    I then place in a food processor (or it can be chopped by hand). Do small amounts at a time or part of it will be pureed into baby food. Trust me. I also put a couple of onions (We like onion a lot) and a couple of ribs of celery through the processor or chop by hand. Mix with mayonaise and salt to taste. Best if you can cover and allow to sit in fridge over night since the longer it sits the better the flavors mingle.

    I can't tell you how many times I've een asked for this recipe or how surprised people always are when they hear how simple it is.
