Peanut Butter Easter Egg Candy



Peanut Butter Easter Eggs

6 tbsp butter, melted & cooled
1/3 cup light corn syrup
2 tsp vanilla extract
1/2 tsp salt
3-1/2 cups powdered sugar
1-1/2 cups creamy peanut butter
1 lb semisweet chocolate
3 tbsp plus 1-1/2 tsp vegetable shortening

Mix first four ingredients. Gradually add powdered sugar and peanut butter and beat till blended. Sprinkle about 1 tablespoon additional powdered sugar on a flat surface. Spoon peanut butter mixture onto the prepared surface and knead about 5 minutes. Use 1-1/2 teaspoon mixture per candy and shape into an egg form. Place on wax paper covered pan. Refrigerate 1 to 2 hours. Melt chocolate and shortening in a double boiler,stirring constantly.This will take about 20 minutes to combine smoothly. Put the candies on the ends of a fork and dip in chocolate. If chocolate gets stiff put itplace back in top of double boiler and work till it gets thin again. Allow the candies to dry some and then cover and store them in a cool and dry place. Makes about 40 candies.

These can also be made in different shapes for any time of the year!
