Have my Mom visiting for a few months so it has been hard to stick to a diet. Not saying I don't enjoy cooking things she likes. She needs to keep her weight on while she is here.

one week on SB

I didn't believe I was losing weight, with all I was eating! But today I noticed my waistband seemed a little looser. So I got brave and stepped on the scale. I'm down about 5# (hard to say exactly, since the needle on my scale is a little shaky -- probably out of fear every time it sees me getting ready to step on).

I have one more week on Phase 1 (no sugar, fruit, bread, pasta, potatos, rice...) Then I can start adding them back. I can't wait to have a glass of wine again!

But overall, this has been pretty easy! I can do it! I'm learning to be really creative with ricotta and cottage cheese.

south beach

day 2 of SBD....so far, so good - I was a little hungry last night but tolerable. Yesterday I had an omelette with lf cheese and mushrooms/red onion...(March break did not get up til late ) pistacheos for snack mid afternoon and for supper I made the greek salad and Savory Chicken Saute (both recipes in the book) and BOTH were excellent! This a.m. another late a.m. so I had the ricotta cheese with cocoa and I really liked it...will have an egg later for late lunch but am wondering about supper....I am having a hard time coming up or seeing that I can make suppers...hubby and I are both trying this. Anyway, wanted to get on this thread and hopefully people will share their recipes for meals for phase 1 and we can encourage one another etc. I also bought an XL glider and am doing between 15 mins to 30 mins on it a day...

Welcome, Goria. I'm in my 3rd week now. For dinner, I've learned that pretty much anything we used to eat can be altered to be SB friendly. Like taco salads (just skip the chips, and use lite cheese/fat free sour cream...)

Tonight, I'm going to try this meat-crust pizza:

"Meat Crust" for Pizza
Ingredients:
1/2 lb ground beef
1/2 lb sausage (hot or italian)
Garlic powder to taste
Onion powder to taste
(You can use Italian seasoning or any other seasonings you wish)
1 large egg
1/4 cup soy protein powder (to help hold it together)

Preparing:
Mix all together and press out thin in a greased metal pan (I use a 9X13 cake pan) Bake at 350 for appx. 25-30 minutes (till done), pouring off the excess grease that accumulates as it cooks. Then take out and spread a thin layer of tomato sauce (watch the labels for carbs here) and whatever toppings you like and put back in for another 10 - 15 minutes.


And keep watching these boards. The ladies here have given me so many good ideas.

Last night my husband commented that our 2˝ year-old son, Ethan, has been behaving much better the last couple of weeks. (At least as well as you could expect a 2˝ year-old to behave.) Anyway, I did the math, and his behavior seems to have gotten better since I started South Beach. I'm thinking maybe because he's not getting so much sugar. I just don't keep cookies, ice cream, etc. around the house because I know I couldn't resist them. For snacks, he gets more peanut butter, veggies, even cottage cheese.

soup recipe

I made a soup for supper that was pretty good...

Tbsp olive oil
2 cloves garlic, minced
1/2 onion chopped small
1/2 tsp celery seed
sauted...
added:
1 cup thawed broccoli spears, cut up
1 can drained mushrooms
1 cup fresh spinach cut fine
1/2 cup curly parsley cut fine
salt and pepper to taste
1 large can diced tomatoes with herbs & spices (I pureed these in the blender first.
about 3 cups water
Heated through
Served with small cubes of l.f. cheese

My husband said it was tolerable (he doesn't like tomato based soup) but my 13 year old daughter quite liked it!
We are all eating better.
The leftovers I am saving for a work day and I will take with me for lunch!

Hi hi....

dh and I are going to start SBD tomorrow.... we have done atkins before and lost some weight but found that the diet was just to strict!!!
so of course we went off of it and have gained the weight back....

SBD seems a little less strict... sheesh.. after the first 2 weeks you can have FRUIT!!!! YAY!!!!

anyways... I got some recipes all set out for the week... so we will see how it goes...

what are you all planning for Easter Dinner???
