Cranberry Sauce (Diabetic)

Cranberry Sauce (Diabetic)
2/3 cup water
2 cups fresh or frozen cranberries (8 ounces)
7 1/4 teaspoons Equal® for Recipes or 24 packets Equal® sweetener or 1 cup Equal® Spoonful™

Combine water and cranberries in medium saucepan. Bring just to boiling; reduce heat. Boil gently, uncovered, over medium heat 8 minutes, stirring occasionally. (Skins will pop.)
Remove from heat; mash slightly. Stir in Equal®. Cover and chill.
Serve chilled with beef, pork, ham or poultry.
Makes 1 1/2 cups.

Variation: Orange-Cranberry Sauce

Reduce water to 1/3 cup and add 1/3 cup orange juice. Add 1 teaspoon finely grated orange peel and one orange, peeled, sectioned and chopped, when adding Equal®.

Makes 1 2/3 cups.

Here's an interesting one...

Ingredients:
4 1/2 cup fresh cranberries - (abt 1 lb)
1 1/2 cup water
2 strips orange peel
2 strips lime peel
1 cinnamon stick
6 whole cloves
1 1/2 cup splenda
2 tbsp bourbon

Instructions:
Bring cranberries, water, orange lime peel, cinnamon and cloves to a boil. Boil until the skin of the berries pop open (about 5 minutes.) Remove from heat. Add the Splenda, and mix to thoroughly combine. Cool in refrigerator before serving.

This recipe yields approximately 4 cups.

Total Carbohydrates: 96.54 grams
Total Carbohydrates minus Fiber: 77.43 grams
Carbohydrates per Serving: 1.3 grams
Carbohydrates per Serving minus Fiber: 1.04 grams

Comments: A friend of mine makes a fantastic cranberry sauce with chipotle chiles and star anise. If you want to try it, add 2 canned chipotle chilies, chopped, and 2 star anise to the cranberries and water with the rest of the ingredients. The bourbon gives the sauce a wonderful fruity flavour. Add more to taste if you like.

LOW CALORIE CRANBERRY SAUCE
Ingredients:

1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries, rinsed and drained.
1 cup water or fruit juice
Sugar substitute to taste

Directions:

Combine cranberries and water in a saucepan. Heat to boiling; reduce heat to low and simmer 15 minutes. Remove from heat. Cool to room temperature. Stir in sugar substitute.

Refrigerate until serving time. Makes 2 1/4 cups or 9 1/4 cup servings.

Note:

* Special diet cranberry sauces made without sugar or with sugar substitutes do not gel.

PER SERVING: Cal. 21 (1%DV), Total Fat 0grams, Chol. 0mg, Sodium 7mg (<1%DV), Pot. 39mg (1%DV), Total Carb. 5grams (2%DV), Dietary Fiber 1gram (5%DV), Sugars 1gram, Protein 0grams, Vitamin C 13mg (21%DV), Dietary Exchange: Fruit 0.5
