Diabetic chocolate dessert

Triple Chocolate Cream Cheese "Pie" (per LOL In the Kitchen)

12 oz cream cheese, softened
8 oz heavy cream
2 pkt sugar free hot cocoa mix
1 T unsweetened cocoa powder
1 oz unsweetened baking chocolate, melted
6 pkt artificial sweetener (or 8 if you want it really sweet)
1 env unflavored gelatin
1/2 c boiling water

Stir the boiling water into the melted chocolate and mix well.
Add the gelatin and stir to blend. Set aside to cool. Whip the
cream and set aside. In another bowl, add the cream cheese,
sweetener, and cocoa mix. Mix well. When chocolate/gelatin
mixture is just warm/hot, add it to the cream cheese mixture and
mix well. Using a hand mixer on low, whip the cream cheese/
chocolate mixture into the whipped cream. Pour into a pie plate
and chill for a few hours before serving. Makes 8 servings.

Nutritional information: 286 calories, 28 g fat, 6 g protein,
6 g carbohydrates, 84 mg cholesterol, 192 mg sodium, 1 g fiber.

As both of us are diabetic, and we both love yummy desserts, this is Very Good, and easy to make



Chocolate Eclair Dessert

24 low fat graham crackers
2 small sugar free vanilla instant pudding
3 cups skim milk
1 (12 oz) fat-free Cool Whip
1 small sugar -free chocolate instant pudding
1 1/2 cups skim milk

Place 8 crackers in bottom of 13x9 in. pan. Then mix the 2 pkg of instant vanilla pudding with 3 cups milk, let set 2 minutes. gently fold in cool whip , pour half on graham crackers, top with another layer of graham crackers. pour remaining pudding mixer over crackers. Top with last 8 crackers, . Mix the small choc instant pudding with 1 1/2 cups milk. let set 2 minutes , and then spread over top layer of graham crackers. Chill 6 hours or over night , so the crackers soften.
Diabetic exchange =1breadstarch & 1/4 milk.
