Bean and Sausage Casserole

Bean and Sausage Casserole

1 pound dry navy beans
1 pound kidney beans
1 pound low fat turkey smoked sausage
1/2 pound lean smokled ham, cubed
1 tsp black pepper
1 tsp dry mustard
1 - 8 oz can tomato sauce
1/2 cup ketchup
1/4 cup splenda brown sugar
1 large onion, chopped

Soak navy and kidney beans separately however you normally soak dry beans. After soaking drain the beans. Put beans in separate pots and cook till tender. Put sausage into a skillet and add a small amount of water, cover and simmer 5 minutes. Remove lid and brown. Cut each link into 2" pieces. Preheat oven to 400 degrees. Combine beans with ham and sausage. Combine the seasonings and add to beans and meat. Put mixture into a 3 quart casserole and bake uncovered for 1 hour. Makes 12 servings.
