Betty Crocker's Impossibly Easy Pumpkin Pie

as posted by cat lover in the Sept. 2005 WFD? thread

Betty Crocker's Impossibly Easy Pumpkin Pie

1 cup canned pumpkin (not pumpkin pie mix)
1/1/2 cup Original Bisquick® mix
1/1/2 cup splenda
1 cup FAT FREE evaporated milk
1 tablespoon butter or margarine, softened
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla
4 egg whites

Heat oven to 350ºF. Grease 9-inch pie plate. Stir all ingredients until blended. Pour into pie plate. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 3 hours or until chilled. Serve with whipped topping. Store covered in refrigerator.

(High Altitude (3500-6500 ft) Bake about 55 minutes.)

So glad I found this! I'd misplaced my copy and couldn't find it anywhere(probably in one of my "piles") LOL

“The value of doing something does not lie in the ease or difficulty, the probability or improbability of its achievement, but in the vision, the plan, the determination and the perseverance, the effort and the struggle which go into the project. Life is enriched by aspiration and effort, rather than by acquisition and accumulation.”
