Copycat version of KFC Original Recipe Chicken Coating

6 batches fried chicken

9 tbsp fine sea salt
6 tbsp nonfat dry milk powder
4 tbsp Accent seasoning -- must use to get authentic flavor
3 1⁄2 tbsp egg white powder
3⁄4 tsp garlic powder


1⁄2 cup ground tellicherry black pepper --you may have to buy the peppercorns and grind them;McCormick spices sells this type of black pepper
6 tbsp seasoned mild chili powder
3 tbsp ground ginger
3 tbsp ground sage
2 tbsp ground winter savory
1 tbsp hickory smoke salt
2 1⁄4 tsp ground anise seeds
1⁄2 tbsp ground celery salt
1⁄2 tbsp ground cloves
1⁄2 tbsp ground tarragon
1⁄2 tbsp ground vanilla bean

Prepare EXACTLY as directed. DO NOT omit Accent seasoning.
Winter Savory can be substituted with this blend you make; then use 2 tbsp of it: 1/2 tbsp ground chamomile, 1/2 tbsp ground coriander, 1/2 tbsp ground parsley, 1/2 tbsp ground rosemary,1/2 tbsp ground thyme, 3/4 tsp ground dried lemon peel, 3/4 tsp ground mint.
MEASURE only the BASE MIXTURE and 11 HERBS AND SPICES ingredients into a large sealable container.Break up any clumps (and dry milk powder) using the back of a spoon. Seal container. Shake container to mix well. Store container sealed and a dry place.
To use, measure 1/2 level cup of this mixture plus 2 cups unbleached breading flour into a large reclosable container. Seal the container with flour and seasoning; SHAKE well until thoroughly combined.
Dip chicken into water and then into seasoning mix.
Then fry;deep fry is preferred method.
