chuckle Peanut Butter and Jelly Cookies

1 cup shortening, or ¾ cup butter or margarine, softened; 1 cup sugar; ½ cup packed light brown sugar; 1 teaspoon vanilla; 2 eggs; 3 ½ - 4 cups all-purpose flour; 1 teaspoon baking soda; 1 cup peanut butter; your favorite flavor jelly

Cream shortening or butter, sugar, brown sugar and vanilla in a large mixer bowl until light and fluffy. Add eggs; beat well. Combine 3 ½ cups flour and baking soda; add to creamed mixture. Stir in peanut butter. Add remaining flour, if necessary, to make a heavy/firm dough.
Roll into balls the size of walnuts and place on ungreased cookie sheet. Using pinky finger, make a small indentation in the top of the ball (as you would for thumb print cookies, but not as deep). Spoon a small amount (about ½ teaspoon) of jelly in the indentation. Bake at 350 for 10-12 minutes or lightly browned. Cool slightly. Remove from cookie sheet; cool completely on wire rack. Makes about 5-dozen cookies.

NOTE: I do not know if this dough freezes. I have always made this for large church get together and never had any leftovers!

Even adults seem to enjoy this cookie as it is two "comfort foods" in one.
