Groundhog Day Cookies

Pepparkakor Cookies cut with Groundhog Shape
from Kirsten's Cookbook, American Girls Pasttimes

Beat 1 cup (16 Tbsp) butter with 1 1/2 cups sugar until fluffy. Add in 1 egg, 2 Tbsp maple syrup, and 1 Tbsp water.

Sift together 3 1/4 cups flour, 2 teasp baking soda, 2 teasp cinnamon, 1 teasp ginger, 1/2 teasp ground cloves.

Gradually add flour to butter/sugar. Chill dough 1 hour.

Preheat oven 350F. Ungreased cookie sheets.
Use flour to roll out dough and cut to shapes.

Bake 8 to 10 minutes until they are lightly browned on the bottom. Watch the cookies carefully. They burn easily. But they are sooo good!

Poor Phil, He saw his shadow today.....six more weeks of Winter for you guys in Pa.


We have a "generic" version of Phil in NC. Looks like mild weather is on the way for us!


Gotta say, I've never heard of Groundhog's Day cookies before. They sound good!! Thanks for sharing them with us!!

Hi ajrsmom,

I wondered how many groundhogs were out there. PA lottery even has a groundhog. I guess you can use any rolled dough recipe. I like this one because the dough is brown colored like a groundhog.

What is your (generic) groundhog like, do?

I'm really not sure what he looks like. My son and I were watching the news while he was getting dressed for school and I was making his lunch. I happen to hear them mention Phil and then say " We have our own groundhog too" but they never showed a picture of him.

I think he's confused though because he called for warmer weather on it' way and we are right in line for colder weather starting out as thunderstorms and turing into freezing rain and much colder temps.


No matter what the weather outside, if the Steelers win on Sunday, it will be warm and sunny for us here!!!!

If you want a sandwich to go along with your Groundhog cookies, there's nothing like a good Roethlis"burger" to go with them!! LOL!!

I love Ben but I think I will have to pass on his sandwich!

The sandwich consists of ground beef, sausage, scrambled eggs, grilled onions and American cheese and is served on a portuguese roll. ( add lettuce and tomato too).http://www.ahamburgertoday.com/archi...thlisbur_1.php

Groundhog Day is coming! It's this Friday. Up in Punxatawney PA they are getting ready for the big celebration. I think considering we really haven't had much winter so far this year that the prediction for six more weeks of winter or spring will be all the more interesting.

Got my ingredients ready to make the cookies!

Not really, we have just had dustings for the last week and some zero temps with winds. Tonight or was it last night we might get 1 -2 inches. Hasn't happened yet but maybe it has up north, Phil's way. Could check the Weather Channel a bit later.
