Gluten-Free Chocolate Chip Cookies

Gluten-Free Chocolate Chip Cookies

1 cup salted butter, softened
3/4 cup brown sugar, packed
3/4 cup granulated white sugar
2 large eggs
1 tsp vanilla extract
2 cups instant "masa de maiz"
1 tsp baking soda
1 dash salt (optional)
1 cup chopped walnuts or pecans (optional)
one 12 oz bag (2 cups) real chocolate chips

Beat butter, sugars, egg, and vanilla until fluffy.
Add masa, soda, and salt; mix well. Stir in the
nuts and chips. Roll into balls about 1 inch in
diameter or slightly larger. Bake on ungreased
cookie sheets at 375 degree for about 10 mins.
Allow to cool on cookie sheet for several mins
before you transfer them to a rack to finish
cooling. They will fall apart if you try to transfer
them too hot, and they will stick if you let them
cool completely on the cookie sheet.

soft and chewy chocolate chip cookies

4 1/2 cups all-purpose flour
2 teaspoons baking soda
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant vanilla pudding mix
4 eggs
2 teaspoons vanilla extract
4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)

1 Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2 In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3 Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

Makes 72 servings

this is as good or better than the tollhouse recipe which is my next favorite

BIG Yummy Chocolate Chip Cookies
2 Cups plain flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 Cup unsalted butter, melted
1 Cup brown sugar, packed
1/2 Cup white sugar
1 Tablespoon Vanilla Extract
1 egg
1 egg yolk
1-2 Cups semi-sweet chocolate chips

Preheat oven to 325*F. Grease cookie sheet or line it with parchment paper.

Sift flour, soda, & salt together and set aside.

Cream butter & sugars, beat in vanilla, egg, & egg yolk until light & creamy. Mix flour mixture in until just blended. Stir in chips. Drop dough 1/4 Cup at a time about 3" apart. Bake 15-17 minutes or until edges are lightly toasted.

Cool on sheets for a few minutes...transfer to a wire rack to finish cooling.
