Chicken-In-A-Shell

6 baking potatoes
2 Tablespoons butter or margarine
1 (10 3/4 oz.) can cream of chicken soup
1 cup Parmesan cheese, grated
3 Tablespoons fresh parsley, chopped
1 1/2 cups cooked chicken, cubed
Bake potatoes until done; cut potatoes in half lengthwise; scoop out insides and reserve, leaving a thin shell. Mash potatoes with butter; add 1/2 cup cheese and remaining ingredients. Spoon into potato shells; sprinkle with remaining cheese. Arrange potatoes in shallow 3 quart baking dish. Bake at 375 for 15 minutes.
Serves 6
*Got this recipe from a Women's Circle cookbook I bought January 1993.
