Kitchen Knives

I didn't know where to put this question so, I'll try here.

I am wanting to invest in a couple of nice knives. Does anyone have any suggestions. I know I want a chef and a paring knife, but I mean what brand, things to consider, etc.

I don't have any suggestions of specific brands, but a couple of things to look for are:
1. Do the knives feel comfortable in your hand? If you don't like the grip, you won't use it properly.

2. Does the blade go all the way down to the end of the handle? This is the mark of a better knife. I have ONE knife like that, and it's great. I don't know the maker, but if I had to get rid of all knives I own and just keep one, that would be the one!

Hi Julie,
I have Henkel knives and really like them! I especially like the paring knife that is sort of shaped. Sorry, I don't know what they call it. They are kind of pricey, but I wait until I have coupons at Linens and Things or some other store before I buy them. I think I have seen them on eBay before too, if you knew which ones you were looking for.

I've got some Chicago Cutlery that still is in great shape. Got it as a wedding present years ago.

Santoku is the carver and paring knife my husband uses...not sure how much they are b/c my mom bought them for him years ago and he has never had a need to replace them (yet), unlike the others we've had w/wooden handles (that came w/our cast iron pots/pans)
