Pear Flip Flop

In this recipe the pears start out on the top and finish on the bottom!

4 1/2 tbsp unsalted butter
3/4 cup all purpose flour
3/4 cup sugar
1 1/2 tsp baking powder
pinch of salt
3/4 cup skim milk
1 1/4 tsp vanilla extract
1 1/2 cups diced pears
10X sugar for dusting the tops

Cut the butter into chunks and toss into a 9" deep dish pie plate. Put in a 350 degree oven for 5 to 8 minutes or till butter is melted. Mix together the dry ingredients in a bowl add milk,and vanilla and mix till smooth. Pour batter over the hot butter and top with the pears. Bake 45 minutes or till browned and toothpick tests clean in the center. Cool 30 minutes and then dust with the 10X sugar. Great served slightly warm. Makes 8 servings
