Mini Upside-Down Pineapple Cakes

2 (20 oz.) cans pineapple chunks
1/3 cup butter or margarine, melted
2/3 cup packed light brown sugar
12 maraschino cherries, cut in half
1 yellow cake mix

Preheat oven to 350 degrees. Coat 24 muffin cups with vegetable spray. Drain pineapple and reserve the juice.
Stir together melted butter and brown sugar. Evenly divide the mixture among the muffin cups.
In each cup, arrange 3 pineapple chunks over the sugar mixture and place a cherry half in the center, sliced side up.
Prepare the cake mix according to package directions, replacing the water with an equal amount of the pineapple juice. Pour the batter evenly into the muffin cups, about 1/4 cup each.
Bake 20-25 minutes or until a toothpick inserted into center comes out clean.
Let cool 5 minutes. Loosed edges and invert onto cookie sheet.
Yields 24 servings
* I only needed 1 (20 oz.) can of pineapple chunks
Also the melted butter and brown sugar mixture needed to be doubled. There was not enough for 24 muffin cups
Other than that nothing needs to be changed. Turned out good. I will make them again. My batch only made 14 muffins.
Don't go back for less just because you're too impatient to wait for the best.
