Pineapple Upside Down Biscuits

This recipe came from the
It's good. Something perfect for working parents. It don't take much to put together & it's done in the oven fast. Sandy

1 (10 oz.) can crushed pineapple
1/2 c. packed light brown sugar
1/4 (1/2 stick butter) at room temperature
10 maraschino cherries
1 (12 oz.) pkg. refrigerated buttermilk biscuits (10 ct.)

Preheat the oven to 400 degrees F.
Grease 10 cups of a muffin tin. Strain the can of crushed pineapple, save juice for later.
Combine the pineapple, sugar & butter, and mix well. Divide the pineapple mixture among the muffin cups. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 tsp. reserved pineapple juice over each biscuit. Bake for 12 to 15 minutes, or 'til golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

I made these exactly like the recipe. We all loved them. We will make these again. Very easy and quick treat.

Happymomof4 I'm glad you liked the recipe. It has been a while since I've made it. I enjoy recipes that are easy & quick especially during the summertime. And when it's too hot to heat up the house cooking I turn to those type of recipes. I haven't been able to try out much recipes lately with my work schedule as it is. I need to try out some new recipes that I have filed away to test. I have enough for several lifetimes. lololol
Don't go back for less just because you're too impatient to wait for the best.
