Online Christmas Cookie Exchange

I love cookie exchanges. So I thought we could do one here at FC. I know we can't all get together and share the cookies. Won't that be wonderful if we could!

If you would like to participate. Please post a favorite cookie, candy or fudge recipes here on this thread. This way other people can print out the recipes that they want to try.

I am always looking for new recipes and new ideas.

I will post one of my favorite cookies as a kid.

Peanut Butter and Jelly Cookies


Ingredients:
1 cup sugar, plus extra for rolling dough
1 cup firmly packed brown sugar
1 cup Butter Shortening
1 cup Creamy Peanut Butter
2 large eggs
1/4 cup milk
2 teaspoons vanilla extract
3 1/2 cups All Purpose Flour
2 teaspoons baking soda
1 teaspoon salt
3/4 cup any Jam, Jelly or preserves of your choice

Directions:
1.HEAT oven to 375F.
2.BEAT together sugar, brown sugar, shortening and peanut butter. until blended. Add eggs, milk and vanilla. Beat well. Stir together flour, baking soda and salt. Add to peanut butter mixture. Beat well. Shape into 1-inch balls. Roll in sugar. Place on ungreased cookie sheet.
3.BAKE 10 to 12 minutes. Remove from oven. Cool 2 minutes. Make a depression in the center of each warm cookie with your finger or the back of a teaspoon. Fill each depression with about 1/2 teaspoon jelly. Cool completely.
Yield: 5 dozen

Rolled Sugar Cookies

Ingredients
  • 1 1/2 cups butter, softened
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
Directions
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.
I make icing with confectioners' sugar and milk. I make it fairly thin, as I 'paint' the icing on the cookies with a pastry brush. Thin enough to spread easily but not so thin that it just makes your cookies wet and runs off.

Great idea!!

Maratha Washington Candy

Melt 3/4 stick of oleo. Pour over 12 oz chopped pecans.
Mix together 2 cans angel flake coconut, 1-1lb box powdered sugar, 1 can sweetened condensed milk.
Add pecan mixture.
Chill about 2 hrs. Form into balls and place on wax paper over cookie sheets and chill overnight.
Melt 6 oz chocolate chips, 1/2 bar parafin in double boiler. Dip chilled balls into chocolate and place on wax paper. I alwas dip them a 2nd time.
