Chicken Curry over Rice

This recipe was originally posted by Bilby in the Dec 2013 What's for Dinner thread.

Chicken curry over rice

4 chicken thighs cut into chunks
2 carrots roughly chopped
cauliflower cut into chunks
1/4 cup frozen peas
Rounded tablespoon curry powder
1 can coconut cream
1/4 cup water
Greek yogurt
Brown chicken in oil in a pot, add curry powder and stir in.
Add cauliflower and carrots and stir in.
Turn heat right down, add water and simmer until veg are half
cooked then add peas and coconut cream and finish cooking
until tender (approx 45-60 mins).
Cook rice while chicken pot is cooking.
Serve curry over rice and top with a spoonful of yogurt and coriander
(cilantro) if you have it.
Optional papadoms or roti to clean up sauce in the bottom of bowl.

It works with beef or lamb. 1 level tablespoon is mild/med heat.
