Chicken with Vegetables

This recipe was orginally posted in Oct 2010 What's for Dinner thread by Sammi1961.

Chicken with Vegetables: (serves 8)

8 boneless chicken breasts
1/2 C flour
1 tsp salt
1/4 tsp freshly ground pepper
1/4 C olive oil
2 cloves garlic, minced
1 1/2 C sliced onion
1 green pepper, sliced
2 C sliced mushrooms
2 Tsp oregano
10 cherry tomatoes (I used grape tomatoes and many more then 10)

Preheat oven to 357 degrees F. Grease a shallow baking pan with margarine. Cut each chicken breast into four pieces. Coat chicken by shaking each piece in a plastic bag with flour, salt and pepper. Place chicken in baking pan and grind additional pepper over it. In a large skillet, saute garlic and onions in oil until soft. Stir in green pepper, mushrooms and oregano and cook for one minute. Add tomatoes. Pour vegetables over chicken and bake for 45 minutes or until chicken is fully cooked.
