Thumbs up Chicken & Potatoes

This recipe was originally posted in What’s for Dinner October 2007 bySammi1961

One-Pan Chicken and Potatoes
5 large potatoes
1 large onion
Olive Oil
6 to 7 pieces of skin-on, bone-in chicken
Kosher salt

Peel potatoes and cut into chunks (a large potato I usually cut into 6 pieces) and add onion, sliced into pieces and mixed into potatoes in a large baking pan. Sprinkle well with oregano and drizzle with olive oil. Place chicken pieces on top. Sprinkle kosher salt onto chicken really coating it well (meaning a lot of salt!). This make the skin come out crispy. Bake uncovered at 425 until potatoes are tender and chicken crispy (usually 1 hour depending on sizes of chicken pieces). If you use skinless chicken, add some real butter as the skin helps flavor the dish.

The chicken and potatoes recipe was delicious! I did have to make a substitution though, I couldn't find kosher salt so I used table salt. The directions were very simple to follow and my family loved it! I did get too much salt on the chicken so next time I make it I will use less salt. It was delicious when you took the skin off the chicken. I would say this recipe deserves a blue ribbon!

I made this for dinner tonight it was a win I mad a couple of adaptions I added a rib if celery an a bit of garlic powder. I liked this recipe because it is low in calories yet tasty. on to the next recipe.
